The Tallest Mountain & the Clearest Skies in New Zealand

After departing Dunedin, our travels led us back through Queenstown and then up through the center of the South Island of New Zealand to Aoraki/Mt. Cook National Park and Lake Tekapo.

We had a few good Paleo eats along the way as well. In Dunedin, we had breakfast at this great spot called Good Oil Cafe. They had delicious coffee and food with tons of healthy options. I had the kumara (sweet potato) hash with poached eggs and smoke salmon…however it appears I was too hungry to consider a picture at the time!

For lunch, we ate in Cromwell, a city outside of Queenstown with a cute little historic part of town.

The Grain & Seed Cafe, despite its name, had healthy paleo options as well. Everything was made from scratch, delicious, and the place is adorable! I had a tasty salad with a mint and honey vinaigrette.

I’m Back!

Hi There!

We made it back from our amazing trip in Peru! It was an incredible adventure filled with lots of history, culture, wild animals, jungle walks, hikes, tiny towns, big cities, and a few amazing new friends. I do have some upcoming posts to share much more about our journey in Peru, so stay tuned for those posts to come!

Mission Completed: Learned How To Perfectly Fry An Egg

I love breakfast, especially breakfast involving eggs. I could eat breakfast for any meal (who needs lunch food? It’s usually overrated). So, normally, breakfast and eggs are a must have every day for me. I generally mix-up the different ways I eat eggs…scrambled with a variety of ingredients, an omelette, poached, or over-easy. I have always liked sunny-side up eggs when I go out for breakfast, but never really attempted to make eggs sunny-side up at home because I was always intimidated by the process (lame, I know). I have tried a few times before and always failed to make it sunny-side up, so I just stopped going there. My eggs basically always came out folded over anyways, so it seemed better just to go with over-easy method I knew.

Keeping it Paleo in Washington D.C.

It’s been quite awhile since I have had time to create another post. I have been traveling non-stop for work the past few weeks, and in the midst of all of the traveling, we have also had to move. To say the least, it has been incredibly busy! Now that things are settling down, I will have more time to regularly add new posts and work on finishing all of the pages I intend to create for the site. It is certainly still a work in progress, but I promise there is more to come soon!
